The Two Most Famous Cuisine in Kolkata.

THE UNFORGETTABLE INDIAN CUISINE.

Be it an Indian or a foreigner, the love for Indian cuisine is totally out of the world. No doubt Indian cuisines are very much healthy. The local herbs and spices are the one that enhances the taste of the food. Side by side the people who are in the making of this cuisine, prepare the food with so much of their heart and love that definitely brings extra added taste into it.

Magical Ingredients.

The main magic is still hidden in the flavors which come from the locally cultivated herbs and spices such as Chili Peppers, mustard seeds, cumin, fennel, cardamom, cinnamon, turmeric, and most importantly garam masala and desi ghee.

The garam masala plays a very important role in the cooking procedure.

Desi ghee is usually used at the very end of the process to give a buttery flavor that has its own flavor.

Indian Cuisine varies according to geographical areas, different religions, etc. 

Mostly all Indian dishes are cooked in the traditional Indian cooking utensils, likes Tawa pan ( a flat grill pan similar to plancha, used for cooking fresh bread like roti) and tandoor ovens.

Some dishes in Indian Cuisine are, aloo ghobi, chana masala, butter chicken, chicken tikka masala, palak paneer, fish curry, tandoori meat, etc.

Evolution of Chinese Food in Kolkata. 

In the early 19th century the immigrant Chinese people used to visit India for different trading purposes. They occasionally started selling street foods in the local streets of Kolkata (bazaars). Later they opened Indo-Chinese restaurants in Tiretta Bazaar and Tangra, the two Chinatowns in Kolkata.

We Bengalis love chow-mien and spicy chili chicken just after our eternal dish Biryani. But the Chinese cuisine in India is not the authentic one and most probably that’s why we called it Indo Chinese cuisine.

The “Trio” of Tomatoes, Soy Sauce, and the Chilli play the most vital role in any of the Chinese food.

Some of the famous Chinese dishes are : 

• rice

• Manchurian ( veg and non-veg)

• Chow-mien

• Chilli chicken

• Dim sums

• Moon cake

• Zongzi 

• Steamed stuffed bun

Moreover, the eight main Chinese cuisines are Anhui, Cantonese, Fujian Hunan, Jiangsu, Shandong, Szechuan, Zhejiang.
